Spring Rhubarb!

    The rhubarb was very full this weekend, with leaves cascading over neighbouring strawbs – yes this is the “tart” part of the plot! Harvesting some stalks required a quite yank and the next thing I knew rhubarb was stewing on the stovetop. Rhubarb is used medicinally as a laxative and i think has some claims to reducing high blood sugar…In the kitchen however, its uses are rampant – from chilled rhubarb soup in the summer, to crumbles, pies, and upside down cakes.
